Next week I plan to bake brownies and cookies. I will be making lasagna for dinner on Monday, crack ranch chicken Tuesday, macaroni and cheese Wednesday, and enchiladas Thursday. Friday will likely be leftovers. Or fish. To save money, I often make large amounts of food, and then we eat the leftovers for days. It’s a nice way to make money stretch. God knows food is frighteningly expensive right now.
All of this feels especially good because for years, I was too afraid of the oven to use it or to use kitchen appliances like a gas stove. I didn’t always cook much. Childhood trauma held me back. But I’ve worked through so much of it. This will be the first time I have baked my own brownies. I’m very excited! So many meals to make, plus I might bake more bread next week. I made two loaves this past week.
Recently I added to my Lisa Frank collection. I got a ballerina bunnies clock, a backpack with the rainbow dogs, an alien folder and tin, and a holographic glitter alien binder. Next week, a Zoomer and Zorbit pencil case will arrive to go with the binder. I use that as a traveling reading, writing, and digital art center. It holds my Kindle, pens, a journal, my iPad, and a book.
Lisa Frank is my idea of designer bags/stationery! I don’t buy Coach or Gucci or anything like that. I don’t have an interest in any of that. But Lisa Frank and Swarovski crystals are two things I love to collect. My husband spoils me! I feel so blessed.
Today my husband and I spent some time relaxing and watching YouTube after lunch on our phones. In addition to space documentaries, I’ve been watching videos about science fiction and speculative fiction – my two favorite genres of fiction. I heard about a couple of sci-fi novels I want to read, such as Ice by Anna Kavan. There are also some speculative fiction magazines I’m interested in getting into. So much reading to do, so little time.
